Delicious Yam Toasties

 

Just like toast bread, yam toasties involve the use of a toaster. However, the procedure is slightly longer and a bit more technical.  The yam has to be boiled and made into a batter before it can be well toasted and the beauty about yam toasties are they can serve simultaneously as a snack and a proper meal.
Ingredients

  • One tuber of Yam
  • Ground or habanero pepper
  • Carrots, Green Pepper, Spring onions (optional)
  • Eggs
  • Salt and Seasoning
  • Vegetable oil
Procedure
  • The first step to take is to cut the yam into pieces and boil till its soft.
  • Once it is well cooked, you transfer to a bowl and then add the eggs, carrots, spring onions etc.

Then begin to break the yam with a spatula until it becomes a soft mash. N.B-Do not add water when doing this. If it is watery , it will turn intoa mess when you are ready to toast it.

Once you are done with that, use a potato masher or food processor to blend the yam into a fine, smooth batter. I had to make do with a regular blender as I didn’t have any of the aforementioned equipments. 


Now, pour your blended mix into a bowl; add seasoning, ground pepper and any other ingredient you would like your toasted yam to have.

  • Mix the batter thoroughly and set aside.
  • Now properly grease your toaster with either vegetable oil or butter. I chose to use butter instead so my toasted yam will have a nice aroma to it.
  • Turn on the toaster and wait till light turns green,then pour the batter nicely into it.Image: Olabanke Banjo Image: Olabanke Banjo
  • Allow to toast for 25 minutes or more, depending on how crusty and brown you like your toast.
  • Voila! You just prepared delicious yam toasties.
